All you need to do is soak Mungday protein mix for at least 2 hours or overnight in water. Drain, rinse and put it in a large pot. Add zucchini and a carrot, a teaspoon of extra virgin coconut or olive oil, Mungday spice blend and boiling water. Bring to the boil then turn down to simmer.
When the mung is cooked, blend broth with a stick blender. Serve hot with a sprinkle of salt, pepper and a generous squeeze of lemon.
